Mussels in garlic cider cream

This is one of my favourite supper dishes, super easy to do and a great sharing dish for everyone to dig into in the middle of the table.


1 leek finely chopped
1 onion finely chopped
600g of mussels cleaned
500ml of crème fraiche
Good quality traditional cider
1 tsp dried thyme
1 tsp mixed herbs
Decent knob of butter
Fresh chopped chives to garnish
2 large garlic cloves finely chopped
1 pack of smoked bacon lardons
