Sweetcorn fritters with spicy chunky salsa.
Prep time: 20 minutes
Cook time: 10 minutes
Serves 4 people
These crispy sweetcorn fritters are a lovely sharing recipe if you have friends coming over-simple and quick to prepare too.

For the fritters
3 tbsp Mazola Pure corn oil
325g frozen sweetcorn kernels
2 eggs beaten
100g plain flour
1 tsp baking powder
1 spring onion finely sliced
1 red chilli finely chopped
10g coriander chopped
For the salsa
1 avocado
2 salad tomatoes finely diced
1 red pepper deseeded and diced
1/2 lime, juiced
4 tbsp Mazola Pure corn oil
Salt and pepper to taste

Combine all the fritter ingredients in a large bowl- apart from the Mazola Pure corn oil and mix thoroughly. It should be a nice thick mixture.
Warm a large frying pan with the Mazola Pure corn oil ready to cook the fritters.
Drop dessert spoonfuls of the mixture into the warm oil with enough space round to turn them, cook for 2 minutes each side on a medium heat until golden brown and crispy on the outside.
Combine all the salsa ingredients in a bowl and mix well.
Serve your hot fritters with a side bowl of salsa and eat immediately!IMG_1590
