Mussels with bacon and leeks in cider and creme fraiche sauce.

Mussels in garlic cider cream

This is one of my favourite supper dishes, super easy to do and a great sharing dish for everyone to dig into in the middle of the table.


1 leek finely chopped
1 onion finely chopped
600g of mussels cleaned
500ml of crème fraiche
Good quality traditional cider
1 tsp dried thyme
1 tsp mixed herbs
Decent knob of butter
Fresh chopped chives to garnish
2 large garlic cloves finely chopped
1 pack of smoked bacon lardons

Warm some oil in a pan and add your onion leek and fried herbs.
Now add the butter and the bacon and let this start to colour.

Then throw in the mussels stir well and add the cider, pop the lid on and leave this until the mussels are just opening.
Now add the creme fraiche and stir well. Add the chopped fresh chives and serve immediately with crusty bread.IMG_1739
