Chicken fajita lettuce wraps

Serves 2 people
This is great healthy alternative to normal fajitas, you can add a lot more various vegetables if you wish.
365g chicken strips
2 sliced red peppers
1 sliced large onion
1 chopped garlic cloves
1 tsp sweet smoked paprika
1 tsp cayenne pepper
1 tsp of cumin
4 tbsp Mazola Pure corn oil
2 tbsp lime juice
salt, black pepper to taste
2 heads of romaine lettuce stripped to leaves
A handful of chopped mint
1 avocado sliced
Salsa to serve-optional
1 In a small bowl combine 2 tablespoons
of Mazola Pure corn oil, lemon juice, oregano, cayenne pepper,
smoked paprika, garlic, ½ teaspoon salt and ¼ teaspoon of black
pepper. Add chicken strips and toss to coat.
Marinate for 30 minutes.
2 Preheat 1 tablespoon of Mazola Pure corn oil in a large frying pan
over medium high heat. Add onion and red peppers and cook for 5
to 7 minutes or until tender and just starting to colour.
3 Remove from the skillet and set aside.
4 In the same skillet, preheat remaining Mazola Pure corn oil. Add
chicken and cook for 5-6 minutes, stirring occasionally, until
thoroughly cooked through. Return pepper mixture to skillet, toss to
combine and cook for one minute more. Adjust the taste with more
salt and black pepper if necessary.
Add the sliced avocado onto the lettuce leaves, spoon chicken
mixture onto lettuce leaves and sprinkle with the fresh mint and a
spoonful of salsa and serve immediately.
