Squid and chorizo risotto

150g cooking chorizo, sliced

Olive oil for frying (about 2 tbsp)

1-2 shallots, finely chopped

2 garlic cloves, crushed 350g

arborio risotto rice

200ml dry white wine

7 saffron strands

1.25-1.5 litres hot vegetable stock

2 large squid tubes, cleaned, patted dry with kitchen paper, cut into 1cm rings

100g grated parmesan, plus extra to serve

100g cold butter, diced

This is great healthy alternative to normal fajitas, you can add a lot more various vegetables if you wish.

Serves 4 people
These crispy sweetcorn fritters are a lovely sharing recipe if you have friends coming over-simple and quick to prepare too.

Soft Polenta with mixed mushrooms.

A really simple and comforting supper, soft polenta is a wonderful base and can be used as a substitute for mashed potato.
This would also make an easy but impressive dish for friends as well.
Ingredients

250ml milk plus 100ml extra if needed
250ml water
1/2 cup fine corn polenta
50g  pecorino, grated
3 tbsp unsalted butter

This is one of my favourite supper dishes, super easy to do and a great sharing dish for everyone to dig into in the middle of the table.

Ingredients

Peach American pancakes

Peach pancakes

Serves 4
Lovely breakfast or dessert. Great for kids to help with too.

135g plain flour
1 tsp baking powder
1/2 tsp salt
2 tbsp castor sugar
130 ml milk
1 large egg beaten
2 tbsp melted butter

1 tin of peaches sliced in juice
Maple syrup
Icing sugar to dust

Using an electric hand blender whisk all the pancake ingredients together until smooth, it should be a thick mixture.
